A cold, thick soup that is easy, delicious,
low in calories and extremely healthy! It makes a more filling soup when
served with croutons.? If you are growing a garden, this is a great way to
use some of the surplus!
- 1 medium slicing cucumber, cut into chunks
- 1 clove garlic, cut into smaller pieces
- 1 medium-large red bell pepper (can substitute other colors, but red works
best for color)
- 1/2 medium onion, cut into chunks
- 1 medium-large tomato, cut into chunks
- 8 oz. can tomato sauce
- 3 Tbsp. extra virgin olive oil, optional
- 3 Tbsp. vinegar
- salt & pepper to taste
- cilantro, optional
